Have a big day ahead? These gluten-free, high protein, blueberry pancakes are a great way to achieve optimum brain performance compared to refined, white flour and artificially flavored corn syrup that can reduce the ability to think or concentrate.
Brain Fuel Pancakes
INGREDIENTS:
· 2 cups rolled Oats
· 1½ cups egg whites
· 2 cups low-fat cottage cheese
· 1 tsp of vanilla

To Serve:
Top with coconut oil and a dash of Himalayan pink sea salt, then drizzle with genuine maple syrup. I like to use Coombs maple syrup which you can find here.
Note: Maple tree syrup contains healthy antioxidants and minerals that maintain blood sugar levels better than maple-flavored high-fructose corn syrup. You can read More Here.
