As we're welcoming the first new breath of Spring tomorrow, I just had to whip up this pear bunny salad. My mom always makes this, even now that there are no little kids running around beneath the table. (My mom is rather well known for her creative cooking, along with her well organized after-dinner entertainment, such as puppet shows and fully costumed skits, so this recipe brings with it some pretty fond memories.) Even if the weather isn't cooperating in your area, it will definitely feel more like spring once you've had your Pear Bunny!
Mom's Pear Bunny Salad
Ingredients
- 1 can of pear halves
- Raisins
- Dried Cranberries
- Sliced Almonds
- Cottage Cheese
- Lettuce
Directions
- Arrange a leaf of lettuce on each salad plate.
- Next place two pear halves cut side down on the center of each plate. Place one pear half slightly propped up on top of the first pear to become the head.
- For the eyes, gently poke holes at the wide end of the top pear using the tip of a sharp knife. Cut the dried cranberries into small pieces with scissors and press them into the holes you've created. in the same way, add a small piece of raisin for the nose.
- For the ears, insert almond slices standing upright behind the eyes.
- For the cottontail, drop a dollop of cottage cheeses at the wide end of the bottom pear.
So fun to make... and to eat!
