I used to think quinoa [pronounced Keen-wah] was an ostentatious rice served by fancy restaurants, but I recently learned that, unlike rice, quinoa is a complete protein by itself. Rice must be combined with beans in order to become a complete protein, but 1/4 cup of quinoa contains 6 grams of protein all on it's own. How cool is that!?
So, I've been experimenting with these quinoa cakes:
Quinoa Cakes
1 cup rolled oats
1/4 cup uncooked quinoa
2/3 cup sliced almonds
1/2 cup raisins
2 very ripe mashed bananas
1 cup rolled oats

Directions: Preheat oven to 325°. In a large glass bowl, mix all ingredients together until moist. Line a jelly roll pan with wax paper. Drop the batter onto the wax paper then gently flatten and shape the edges into round cakes. Bake 15-20 minutes. Cool and store in an airtight container.
Great with a glass of milk, or toss a bag in your car for a healthy snack on the go!
