Tasty Caprese Tidbits


I have a really bad sweet tooth.
So, I'm always on the lookout for tasty treats that are also good for you.


One of my favorite healthy snacks is this mozzarella, tomato, and basil caprese salad. I first had these at my brother wedding reception several years ago. I remember that they were soooo good, I ate half a dozen of them. (Which is saying a lot considering there was wedding cake nearby.)



These are really simple to make, so I make them for snack whenever I have the ingredients on hand. You just stick a cherry tomato on a toothpick, with a chunk of mozzarella, and a couple of fresh basil leaves. (I tore the basil leaves into smaller pieces here so they wouldn't be quite so overpowering, but if you like basil a lot you could leave them whole.)



After assembling the skewered morsels, dip them in a shallow bowl filled with your favorite vinaigrette salad dressing. Marinate for a couple of minutes, and then enjoy!
