Brain Fuel Pancakes



Have a big day ahead? These gluten-free, high protein, blueberry pancakes are a great way to achieve optimum brain performance compared to refined, white flour and artificially flavored corn syrup that can reduce the ability to think or concentrate. 

Brain Fuel Pancakes

INGREDIENTS:
·       2 cups rolled Oats
·       1½ cups egg whites
·       2 cups low-fat cottage cheese
·       1 tsp of vanilla
·       2 tsp ground flaxseed
·       1 cup dried blueberries

DIRECTIONS:
In a food processor or blender, combine all ingredients (except blueberries) until smooth. Gently fold in blueberries. Preheat a cast iron pan over medium-high heat and coat with coconut oil cooking spray. Scoop 1/4-1/2 cup of the batter onto the pan for each pancake. Flatten with a measuring cup if needed. Cook until the edges begin to bubble. Flip and cook until golden brown.

Makes 4 servings.

To Serve:
Top with coconut oil and a dash of Himalayan pink sea salt, then drizzle with genuine maple syrup. I like to use Coombs maple syrup which you can find here.
