Chili Lime Tilapia

A friend asked for more healthy recipes after posting a few tips with green smoothies earlier, so I thought I'd share this family favorite recipe for Chili Lime Tilapia:

 Ingredients:
• 4 Tilapia loins 
2 tsp oil for pan frying
 Chili Rub (see below)
1 chopped avocado
 1 cup salsa
• 2 tsp lime juice 


Chili Rub:
 2 TBS chili powder
• 1 tsp Montreal seasoning
• 1/2 tsp garlic powder
• 1/2 tsp cumin
• 1/2 tsp paprika
• 1/2 tsp curry powder
• a dash of cayenne pepper 


Directions:
Combine the dry rub spices in a small bowl then, coat the fish on both sides with the mixture. Heat the oil in a cast iron pan on high heat until smoking then, reduce to medium heat and add the fish. Saute until cooked through, turning once with a spatula. (Fish is done when lightly flaky inside.) Drizzle half of lime juice over the fish after it has been flipped in the pan. Combine the chopped avocado, salsa and the other half of lime juice in a separate bowl, to garnish the top after plating. 






Serve with brown rice and green beans.

(A high-heat oil is recommended for frying, but since we only use extra virgin olive oil around our house, we just open the windows to air it out if the smoke alarms go off.)
